Фактори та шляхи підвищення прибутку (на прикладі ресторану «Pizza&Grill»)

Abstract

Кваліфікаційна робота складається із вступу, трьох розділів, висновків та списку використаних джерел. Мета кваліфікаційної роботи полягає у визначенні факторів та шляхів підвищення прибутку на підприємствах ресторанного бізнесу на прикладі ресторану «Pizza&Grill». Об'єктом дослідження є процеси підвищення прибутку на підприємстві ресторанного бізнесу». Предметом дослідження є теоретико-методичні та прикладні напрями підвищення прибутку підприємства ресторанного бізнесу. У роботі розглядаються теоретичні поняття «прибутковість» та фактори, що впливають на зменшення або збільшення прибутку підприємства. Проаналізовано основні економічні показники діяльності ресторану за 2021-2022 роки та завантаженість закладу по місяцях. Зроблено порівняльний аналіз конкурентоспроможності ресторану «Pizza&Grill»та 3-х його конкурентів методом побудови карти стратегічних груп та відображення результатів у вигляді многокутника конкурентоспроможності. Запропоновано напрями збільшення прибутку в закладі харчування. Щоб збільшити прибутковість ресторану «Pizza&Grill» потрібно спиратися на два основні напрямки: збільшення продажів та зменшення витрат. Для отримання бажаного результату пропонується впровадження інноваційних технологій ведення бізнесу.

The qualification work consists of an introduction, three chapters, conclusions and a list of references. The purpose of the qualification work is to determine the factors and ways to increase profits at restaurant business enterprises on the example of the Pizza & Grill restaurant. The object of research is the processes of increasing profits at the restaurant business enterprise. The subject of the study is the theoretical, methodological and applied directions of increasing the profit of the restaurant business enterprise. The paper considers the theoretical concepts of "profitability" and the factors influencing the decrease or increase in the profit of an enterprise. The main economic indicators of the restaurant's activity for 2021-2022 and the workload of the establishment by months are analyzed. A comparative analysis of the competitiveness of the restaurant "Pizza&Grill" and its 3 competitors is carried out by building a map of strategic groups and displaying the results in the form of a competitiveness polygon. The directions of increase of profit in the catering establishment have been suggested. In order to increase the profitability of the restaurant "Pizza&Grill", it is necessary to rely on two main directions: increasing sales and reducing costs. To achieve the desired result, the article suggests introduction of innovative business technologies.
