Особливості обліку, контролю та аналізу на підприємствах громадського харчування (на прикладі ресторана «Бристоль»)

Abstract

У роботі розглянуто питання щодо особливостей організації ресторанного господарства та його нормативного забезпечення, особливостей організації обліку та проблем й дискусій, які виникають у ході його організації. Надано організаційно-структурну характеристику ресторану «Бристоль», висвітлені питання щодо особливостей обліку на підприємстві та розглянуто теоретичні та практичні аспекти системи внутрішнього контролю підприємства і напрями його удосконалення. Проведено аналіз складу, структури та динаміки витрат підприємства. Побудовано економіко-математичну модель на основі кореляційно-регресійного аналізу та надані рекомендації щодо підвищення ефективності діяльності підприємства. У роботі надані рекомендації по поліпшенню діючої системи обліку, контролю та аналізу діяльності підприємства, які можуть бути використані в практиці роботи ресторану «Бристоль».The paper deals with the peculiarities of organization of the restaurant industry and its normative support, the peculiarities of the organization of accounting and the problems and discussions that arise during its organization. The organizational and structural characteristics of the restaurant "Bristol" are given, the questions about the characteristics of accounting at the enterprise are highlighted and the theoretical and practical aspects of the system of internal control of the enterprise and directions of its improvement are considered. The analysis structure and dynamics of expenses of the enterprise is carried out. The economic-mathematical model is constructed on the basis of correlation-regression analysis and recommendations for improving the efficiency of the enterprise are given. The paper provides recommendations for improving the existing system of accounting, control and analysis of the company's activities, which can be used in the practice of the Bristol restaurant.
