У роботі розглядаються науково-теоретичні аспекти організації харчування туристів у санаторно-курортних закладах. Досліджені основи раціонального та фізіологічного харчування людини, визначені сучасні підходи до організації послуг харчування та загальні принципи лікувального дієтичного харчування в санаторно-курортних закладах.
Проаналізовані основні техніко-економічні показники діяльності санаторію-профілакторію «Біла Акація» і його фінансового стану. Представлені результати комплексного аналізу організації послуг харчування, виявлені резерви їх покращення.
За результатами аналізу надані рекомендації щодо удосконалення організації послуг харчування в санаторії, обгрунтована доцільність впровадження іноваційної технології приготування страв «Sous Vide», що підкріплено необхідними техніко-економічними розрахунками.
The paper considers scientific and theoretical aspects of the organization of catering for tourists in sanatoriums. The basics of rational and physiological human nutrition are studied, modern approaches to the organization of food services and general principles of medical dietary nutrition in sanatoriums are determined.
The main technical and economic indicators of the sanatorium-dispensary "White Acacia" and its financial condition are analyzed. The results of the complex analysis of the organization of food services are presented, the reserves of their improvement are revealed.
According to the results of the analysis, recommendations for improving the organization of food services in the sanatorium, the feasibility of implementing innovative technology of cooking "Sous Vide", which is supported by the necessary technical and economic calculations.
