Напрями підвищення ефективності діяльності підприємств ресторанного господарства

Abstract

У роботі розглядаються теоретичні основи ефективності операційної діяльності підприємств ресторанного бізнесу. Аналізується стан фінансово-економічної діяльності кафе «Сінай» за останні два роки. Обґрунтовуються пропозиції із впровадження інвестиційного проекту, щодо перепланування банкетного залу. За результатами дослідження підрахована економічна доцільність впровадження інвестиційного проекту, проаналізовано структуру та обсяг необхідних інвестиційних та операційних витрат, за допомогою методу ланцюгових підстановок, обґрунтована прибутковість даного проекту. Об’єктом дослідження є процес господарської діяльності та формування фінансових результатів підприємств ресторанного господарства. Предметом дослідження виступає управління забезпеченням економічної ефективності підприємств ресторанного господарства на прикладі кафе «Сінай».The paper discusses the theoretical foundations of the efficiency of the operating activities of the restaurant business. The state of financial and economic activity of cafe "Sinai" for the last two years is analyzed. Proposals for the implementation of the investment project for the redevelopment of the Banquet hall are substantiated. According to the results of the study, the economic feasibility of implementing an investment project is calculated, the structure and amount of necessary investment and operating costs are analyzed, using the method of chain substitutions, the reasonable profitability of this project. The object of the study is the process of economic activity and the formation of financial results of enterprises of the restaurant industry. The subject of the study is the management of ensuring the economic efficiency of enterprises of the restaurant economy on the example of the cafe "Sinai".
