Інтеграція принципів сталого розвитку в менеджмент підприємств готельно-ресторанного бізнесу

Abstract

У статті обґрунтовано теоретико-методичні засади інтеграції принципів сталого розвитку в систему менеджменту підприємств готельно-ресторанного бізнесу в умовах воєнного стану та післякризового відновлення економіки України. Розкрито зміст ESG-підходу як комплексної управлінської моделі, що поєднує екологічні, соціальні та управлінські компоненти сталості. Систематизовано наукові підходи українських і зарубіжних дослідників до управління сталим розвитком у сфері гостинності та визначено основні управлінські інструменти їх реалізації. Запропоновано систему індикаторів моніторингу сталого розвитку та обґрунтовано практичну доцільність використання ESG-інструментів для підвищення стійкості, адаптивності, репутаційного капіталу та довгострокової конкурентоспроможності підприємств готельно-ресторанного бізнесу. The article substantiates the theoretical and methodological foundations for integrating sustainable development principles into the management system of hotel and restaurant enterprises under martial law and post-crisis economic recovery in Ukraine. The relevance of the study is determined by the high level of environmental, social, economic and managerial risks faced by hospitality businesses due to military actions, disruption of supply chains, energy instability and changes in consumer behaviour. The ESG approach is revealed as a comprehensive management concept that integrates environmental, social and governance components and shifts the focus from short-term financial results to long-term resilience, adaptability and responsible development. The study systematizes the scientific views of domestic and foreign researchers on sustainable development management in the hospitality industry and identifies the limitations of existing approaches, which are often fragmented and insufficiently adapted to crisis and wartime conditions. Particular attention is paid to governance as a key element that ensures coherence of environmental and social initiatives through strategic planning, risk management, transparency and digitalization of management processes. A structured system of managerial mechanisms, tools and key performance indicators for monitoring sustainable development at hotel and restaurant enterprises is proposed. It is substantiated that the implementation of ESG-oriented management practices contributes to strengthening operational and financial stability, improving resource efficiency, enhancing service quality, increasing stakeholder trust and forming a sustainable competitive position of hospitality enterprises. The practical value of the research lies in the possibility of using the proposed approaches in strategic management, ESG reporting and decision-making processes aimed at ensuring sustainable development of hotel and restaurant businesses in Ukraine.
